Smoked Dry Cured Back Bacon

Delicious streaky bacon. I laid a few slices over a chicken I was roasting this weekend. It was delicious; kept the meat moist and imparted a lovely flavour. And of course the crispy slices of bacon were quickly eaten up by the appreciative diners!

This is some of the best bacon I’ve ever eaten. The passion for the product is clearly evident. It all starts with the selection of the animal then a perfectly balanced cure and finally just the right amount of smoke. This is bacon that tastes of sweet pork just the right amount of saltiness and a kiss of smoke, exactly as it should be.
